Souffle Ingredients:
5 Large sweet potatoes, peeled and cooked
½ tsp salt
1 tsp vanilla
½ stick butter
1/2 - 3/4 cup sugar (or less to taste)
½ cup evaporated milk
2 eggs (beaten)
Mix all above ingredients well, put in a 9x13” backing dish.
Preheat oven to 350 degrees
Topping Ingredients:
1/2 cup flour
1/2 cup brown sugar
1/2 cup chopped pecans
1/4 cup coconut
1/4 cup melted butter
Mix topping ingredients together and sprinkle over top of sweet potato mixture.
Bake at 350 degrees for 30 minutes!
